This raw vegan recipe was inspired by Fully Raw Kristina’s recipes. It is one of my new favourite recipes! I just got my new spiralizer and could not wait to use it! My squash and zucchini from my garden were finally ready to pick and be made into this beautiful, mouth-watering gluten-free vegan pasta! Unfortunately my tomatoes are not ready yet, but I picked some up along with fresh beets at my local farmers market on my home from work. The herbs are homegrown and add so much flavour that they will leave you wondering why you haven’t tried this before!
Now, this is no ordinary pasta. This is a raw, vegan, gluten free, superfood pasta! All you need to make this lovely dish is a spiralizer to make your gluten free vegan pasta and a blender/food processor (I love my Ninja) to make your raw vegan spaghetti sauce. These amazing tools cut your prep time and help keep the kitchen clean.
One of the main ingredients is beets. They are a superfood and can be used in so many ways! Beets are beautiful in colour and loaded with sodium, potassium, magnesium, fiber, phosphorus, iron; vitamins A, B & C; beta-carotene, beta-cyanine; folic acid, boron, tryptophan, and betaine.
Sodium, potassium and magnesium are all electrolyes that regulate the hydration of the body as well as blood pH (acid) levels, and for nerve function and muscle contraction.
Fiber helps regulate bowel movements and are important for the bloods sugar maintenance and helps lower cholesterol.
Tryptophan is a essential amino acid and can not be produced by the body, it helps you relax and improve mood.
Betaine helps protect the liver from storing fat and protect your cells from dehydration.
Folate, also known as vitamin B3, is vital to bodily functions. it must be obtained through the diet, it is vital to cell repair and growth. Folic acid is also important for DNA synthesis, and is absolutely essential for pregnant women to ensure the baby’s brain health.
